Who Likes Lentils??

I found my recipe for this really good lentil stew, so I thought I would share it with those who are unfamiliar with lentils and dare to try something new. Give it a shot, it’s cheap and soo easy to make. It’s great on a cold and rainy day.


Spicy Red Lentil Stew

Prep time: 10 minutes Cooking time: 15-20 minutes Serves: 4

2 cans reduced sodium chicken broth (14.5 oz cans)
1 cup red lentils, picked over, rinsed, and drained
1 medium onion, chopped
1 carrot, chopped
¾ tsp curry powder
½ tsp ground cumin

Combine the broth, lentils, onion, carrot, curry powder, and cumin in a large saucepan, and bring to a boil. Reduce the heat and simmer covered, until the lentils are tender but still hold their shape – about 15 minutes.

Options: Add chopped cauliflower and some frozen peas for a little variation.

Note: Red lentils are smaller than the typical brown lentil, and they cook faster too. Look for them in large supermarkets or Middle Eastern or Indian grocery stores.
